One of my favorite things to do (besides stamping and scrapping, of course!) is bake! I recently went to a home cooking show and got a wonderful recipe. Here it is! (and by the way…it is delicious!)
Buttermilk-Cinnamon Coffee Cake (courtesy of The Pampered Chef)
Ingredients: 2 1/4 cup white flour, 1/2 teaspoon salt, 2 teaspoons cinnamon, 1/4 teaspoon powdered ginger, 1 cup firmly packed brown sugar, 1/4 cup granulated sugar, 1/4 cup canola oil, 1 cup chopped walnuts or pecans, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 large egg, beaten, 1 cup buttermilk
This recipe serves 12: in a large bowl, mix flour, salt, 1 teaspoon of the cinnamon, ginger, both sugars and canola oil. Remove 1/4 cup of this mixture and add the nuts to it and the remaining teaspoon of the cinnamon. Mix well and set aside to use as a topping.
To the remaining butter, add the baking soda, baking powder, egg and buttermilk. Mix to combine all ingredients. Small lumps in the butter are okay! Pour the batter into a well-greased bundt pan. Sprinkle the topping mixture evenly over the top. Bake at 350 degrees for 45-55 minutes.
Final step: Invite 11 friends over for a weekend of crafting and serve this for breakfast!
